Sweet potato waffles with fennel, lingonberries and thyme
It’s the official Waffle Day today in Sweden and to the children’s disappointment, we’re making nutritious sweet potato waffles. Do you think there will be more waffles to us then?
No sorry, just kidding! This waffle recipe is a true favorite that everyone in the family will enjoy, even the youngest ones. The color is beautiful, they taste delicious and the texture is absolutely perfect. In other words – lots to be happy about!

Ingredients
Waffle
1 sweet potato
1/2 small onion
2 tbsp corn starch
1 egg
Topping
1/2 cup cabbage
1/2 small fennel
2 tbsp lingonberries
1 tbsp honey
1/2 lemon, zest
salt & pepper
Instructions
Grate the sweet potato finely. Roughly grate the onion. Mix and squeeze out the liquid. Add the corn starch and 1 egg. Let rest for at least 10 minutes.
Make the salad while you wait! Grate the cabbage and the fennel finely on a mandolin, and mix them with lingonberries, honey, lemon zest and and fresh thyme. Add salt and pepper.
