Homemade Lime-Mint Ice Cream (sshhh with frozen peas!)

A few weeks ago we realized that the freezer was full of green peas and we lacked inspiration for what we were going with them. So we threw the question out on our Instagram (follow us) and crazy good ideas started to roll in immediately!

There were a lot of soups and stir-fries, but the majority of you actually suggested making ice cream so we felt that we had to try it.

Did you just raise an eyebrow now? Does green pea ice cream sound like the weirdest thing you’ve heard? Well we would suggest you to think again. Because this ice cream is among the best nutrient hunter friendly recipes we have tried.

Imagine the same freshness as a lemon sorbet though even tastier with a bonus of nutrients and fiber. Frozen green peas, a banana as the only sweetener and mint and lime for the fresh taste.

We apologize to our families and friends in advance as this is the only dessert we will be serving for a while….P.S. wonder if the would be good as a float with some fizzy kombucha over it?!

Homemade Lime-Mint Ice Cream (sshhh with frozen peas!)

Ingredients

4 bananas, frozen and sliced

1 1/2 cup frozen green peas

1/2 cup fresh mint leaves

1/2 lime, juiced

Instructions

Toss everything in a blender and mix into an ice cream! Garnish with chopped mint leaves and a bit of lime zest.

Notes

TIP!

Try adding a pinch of licorice powder if you dare!
