Christmas cabbage with blood grape and almonds

Red cabbage 2.0 – made with blood grape, almonds and traditional Christmas spices like cloves, fennel and mustard seeds. A perfect green element on the Christmas table, or as an exclusive dish (then we serve it with sweet potatoes and roasted chickpeas).

Ingredients
1 red cabbage 1 teaspoon mustard seeds 1 teaspoon cloves 1 teaspoon fennel seeds 1 teaspoon chili powder 1 dl sweet almonds 2 blood grapefruit To have at home Oil, salt, pepper
Instructions
1. Set the oven to 220 degrees. Cut red cabbage into wedges and place on a plate with parchment paper. Drizzle with oil and salt.
2. Mix mustard seeds, cloves, fennel seeds and chili powder and sprinkle on the red cabbage. Let roast in the oven for about 15 min.
3. Roast almonds in a dry pan and chop coarsely.
4. Peel a squash, grate it and squeeze the juice. Put almonds and grapefruit on the plate and serve as a part of the Christmas table or as an exclusive dish – preferably with roasted sweet potatoes, a mint yoghurt and roasted chickpeas.
