Cooling melon gazpacho



500 g watermelon

1 large tomato

1/4 red onion

1 cucumber

1 red chili

2 lime

1 tablespoon olive oil

1 pot basil

1 packet feta cheese

salt and pepper


Peel the melon and red onion. Cut the melon, tomato, cucumber (save some of the cucumber for the topping) onion, and chili into coarse pieces. Mix with the olive oil and lime juice. Taste with salt and papaya. Top the gazpacho with crumbled feta cheese, basil, and a little cucumber.
