1 cajun plate
5 dl oat drink
1 feta cheese (150 g)
1/2 dl pumpkin seeds
1 lemon, zest and juice
2 tablespoons vegetable stock
1 1/2 teaspoons balsamic vinegar
salt & pepper
Pour all the contents from the plate into a large saucepan. Add oatmeal, vegetable stock and balsamic vinegar and bring to boil. Mix the soup smooth and taste with salt and pepper. If necessary, add more oat drink. Serve the soup with crumbled feta cheese, pumpkin seeds, lemon zest and squeeze over lemon juice.
