1/2 cup red quinoa
1 can (380 g) black beans, rinsed
1 cup grated cheese, i.e. white cheddar
1 cup ajvar / roasted red pepper sauce
1/2 cup greek yoghurt (or plant alternative)
Veggies to roast
2 red bell pepper
1 head of broccoli (250 g)
To have at home
1/2 teaspoon chili flakes
1 tablespoon cornstarch
1 egg
salt & pepper

Cook the quinoa according to the instructions on the package and allow to cool. Mix the beans to a smooth paste in a food processor and combine with the quinoa, chili flakes, cornstarch, eggs and cheese. Season with salt and pepper. Let the mixture rest for about 15 minutes.
Mix the ajvar with the yogurt. Shape the batter into balls and then press out into a burger form. Heat a pan with oil and fry the burgers for about 3 minutes on each side. Serve the burgers with the ajvar sauce as well as the roasted broccoli and peppers or your preferred veggies.
