Banana Waffles With Chocolate

This week is waffle day in various places around the world and we may have just hit some kind of world record in genius. You know the banana pancake who took the world by storm a few years ago and got everyone to start mashing bananas with eggs?

Well here comes – the banana waffle! Same idea as the banana pancake only adapted for a waffle iron. And whether you choose to throw cocoa in the batter or not is entirely up to you. But since we 1) LOVE chocolate, and 2) especially in combination with banana, the choice was easy for us.

So, what else should you serve them with? We enjoy our waffles with homemade jams, sliced banana and cacao nibs. You can make the jam easily in a saucepan with a packet of frozen berries and 2 tablespoons of chia seeds (add extra sweetness if you like).

Banana Waffles With Chocolate

Ingredients

1/2 cup almond flour

3/4 cup oatmeal

1 Tbsp psyllium powder

1 tsp cinnamon

1/2 tsp salt

3/4 cup plant-based milk

2 bananas, smashed

4 egg

2 Tbsp cacao

Topping ideas

sliced banana, whipped coconut cream, coconut flakes, cacao nibs, raspberry jam

Instructions

Blend the oatmeal into a flour if you want a perfectly smooth batter. Mix the dry ingredients. Stir in the bananas, eggs and milk. Leave the batter to stand for 5-10 minutes. Heat some coconut oil in a waffle iron and start making waffles!

Notes

TIP!

Thaw a packet of frozen raspberries in a saucepan with 2 tablespoons of chia seeds. If necessary, add some honey. Voilà, homemade jam!
