Quick and easy vegetarian stroganoff
In this week’s podcast, we talk about the importance of basic recipes. Basic recipes? Well, a common question we get is how you go from thought to action. People have been inspired to start hunting for more nutrition and have realised how big difference food can make for their well-being… But, they do not know where to start.
We think it’s time to start sharing some basic recipes here on the blog. Dinners that you may already be cooking for the family but with a few small adjustments. Like a stroganoff without sausage, for example.
And immediately we feel that we have to correct ourselves! Because this stroganoff is only without sausage if you want it to be without sausage. It’s just as ok to start by just adding lentils to the recipe. Maybe step two could be to halve the amount of sausage? And suddenly, a few months later, a completely vegetarian stroganoff that everyone in the family eats is on the table.
Are you beginning to understand how we work? With baby steps! Small steps are better than no steps at all. Adding a new healthy ingredient to the recipe is a great start.
So, here is our best recipe for vegetarian stroganoff, with or without sausage. But then it will not be vegetarian, of course. But maybe that’s ok for now?

- Servings : 4 1x
Ingredients
1 yellow onion, chopped
1 clove of garlic, finely chopped
Butter or coconut oil (to fry in)
1 tablespoon tomato pureé
1 tablespoon Dijon mustard
400 g crushed tomatoes
1 dl red lentils
1 dl water
1 dl cream or optional alternative
salt & pepper
For serving:
Black rice, sorghum or buckwheat
Instructions
- Boil the rice.
- Heat butter or oil in a frying pan and add the onion and garlic.
- Add tomato purée and fry while stirring for a few minutes.
- Add mustard, crushed tomatoes, red lentils (do not forget to rinse them first), water and cream. Let everything simmer until the lentils are cooked through, about 10 minutes. Add water if necessary. Add salt and pepper.
- Serve the stroganoff with rice and a big salad.
