Clafoutis with caramelized plums
So, it was finally time to publish the recipe that has been spinning around on our Instagram (follow us here) for the past week. Just seven days ago, we did not even know that there was something called clafoutis. Now we plan to make clafoutis for the rest of the year.
Do you like simple recipes that look sophisticated and taste good? Then you should make clafoutis! You could say that clafoutis is like a sweet soufflé. This time we added plums to it because the plum tree out in the garden are full of them. Next time we will probably add apples or cherries.
The icing on the cake are the caramelized plums that you let simmer in butter and honey before you decorate the soufflé with them. Add a few tablespoons of the caramel sauce to the soufflé for extra sweetness. If you want to save time, skip this step. We have not tried it ourselves because there is something about the word “caramelized” that we can not resist, but we are convinced that you will get a wonderful, slightly less sweet, dessert anyway. Maybe serve it with our divine vanilla sauce for extra sweetness?

- Servings : 6–8 portions 1x
Ingredients
Caramelized plums
16 small plums (or 8 medium sized)
2 tbsp butter
2 tbsp honey
Clafoutis batter
1 1/2 tbsp honey
3 eggs
150g regular cream or coconut cream
100g ground almonds
pinch of salt
2 vanilla beans
4 tbsp of the caramel mix (see above)
Instructions
- Preheat the oven to 180 degrees celsius.
- Melt the butter and honey in a pan on medium hight. Wash plums and cut in half, place them face down into the pan and let simmer for about 5 minutes.
- Mix together honey, eggs and cream. Add almonds, salt and vanilla (cut and scrape the beans first) and 4 tbsp of the caramel mix from the pan.
- Place the batter in a buttered oven dish, then add the plums (facing up).
- Bake in the oven for about 30 minutes.
- Serve with whipped cream och our divine vanilla sauce.
