Last minute herring for midsummer
Friends…Today is the day before the DAY. And maybe you came here because you haven’t yet really nailed the midsummer menu? Don’t worry, here you have our last minute herring! The world’s fastest and easiest way to serve herring.
Imagine a small herring plate stuck on a stick. Like a mouthful with everything you want: herring, new potatoes, red onions, chives and dill. Perfect to serve as a snack or at the midsummer buffet.
Last minute herring for midsummer

Ingredients
4 new potatoes
2 filets of herring
1 red onion
1 pot of chives
some dill
toothpicks
Instructions
Start by boiling the potatoes. Let them cool slightly before slicing them into reasonably thick slices. Wrap the potatoes with the herring, and voila, now you have “potato herring”. Top them now with red onion, chives and dill. Stick a toothpick through the herring and potatoes. Done! Now enjoy the DAY!
