Omelette Pizza with mushrooms, baby spinach and feta cheese
This is, in our opinion, the world’s best substitute for pizza! After all, it’s all about the toppings right? By the way, do not forget the classic pizza herbs like oregano and basil!
In a nutrient hunter’s spice cabinet the spices are always well stocked because most spices are packed with antioxidants, especially polyphenols (a strong antioxidant). We were probably around 30 years old before we discovered that the spice cabinet could be more varied than salt and pepper and since then, nothing has been the same. Thyme, turmeric and cinnamon could suddenly turn an ordinary eggplant into lasagna, a cauliflower into a steak and a date into a cinnamon bun. And now oregano can turn some eggs into a pizza!
Below you see our suggestion of what you can put on the pizza, but if you have another favorite topping, go for it. What will it be today – Margarita or Vegetariana?

Ingredients
8 eggs
1 cup of your preferred milk
salt & pepper
1 tomato
½ bell pepper
1 cup of mushrooms
a few pinches of oregano
½ package of feta cheese
baby spinach
¼ can crushed tomatoes
1 tablespoon tomato paste
Instructions
Heat the oven to 200C/400F. Whisk the eggs with the spices and pour into a greased ovenproof pan. Put in the oven until the egg puffs up and is no longer wet. Spread the pizza sauce (crushed tomatoes + 1 tablespoon tomato paste) over the egg. Then sprinkle with the rest of the toppings. Finish with a little dried oregano. Bake in the oven for about 15 minutes, until the topping has a nice color!
