Lemon And Kale Pizza With Capers

Finally 2021! We’re starting the new year with a fresh pizza using a cauliflower crust, topped with kale, lemon and chili!

Lemon And Kale Pizza With Capers

Ingredients

500 g cauliflower
1 cup almond flour
4 eggs
100 g cream cheese
5 potatoes
150 g feta cheese
100 g kale
1/2 cup capers
1 lemon
2 tablespoons lemon juice
1/2 cup fresh basil

To have at home
canola oil
1 teaspoon oregano
1 teaspoon thyme
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon chili flakes
1 teaspoon honey

Instructions

Heat the oven to 200C/400F. Divide the cauliflower into smaller pieces, save the tops and put the cauliflower in a blender and mix until rice-like consistency (measure so it becomes about 1 liter of cauliflower rice). Mix cauliflower rice with almond flour, oregano, salt and pepper. Stir in the eggs and stir well. Let the dough rest for about 10 min.

Spread the dough with a spatula on a baking sheet with parchment paper and bake in the oven for about 15 minutes or until the bottom has a nice golden color.  Allow to cool.

Spread cream cheese over the crust. Slice the potatoes thinly and top the pizza with the potatoes and crumbled feta cheese. Chop kale into smaller pieces and slice the lemon thinly. Spread  both over the pizza. Sprinkle with chili flakes and capers and bake in the oven for about 10-15 minutes.

While the pizza is in the oven: Mix a handful of basil with a clove of garlic, lemon juice, 1/4 cup of oil, honey and season with salt and pepper.

Serve the freshly baked pizza with a drizzle of the basil oil (or try our quick tip using ready-made pesto!).
