Bok Choy Green Smoothie With Pak Choi
Ever heard of a green smoothie with bok choy? We didn’t either so naturally we had to try it since our kitchen garden is flooded with this delicious Chinese cabbage. Catarina, who has planted everything and is the manager of the garden (follow her instagram account here), gave us the stink eye and said that we must eat it, and not let it go to waste. Partly because 1) it apparently starts to bloom otherwise. And 2) to make room for other exciting crops. Such as spinach, artichoke and arugula.
So, after putting it on the grill (recipe here), making an Asian ball with it and sesame salmon (the world’s best recipe here) and a dumpling soup we are now doing green smoothies with bok choy.
Smoothie With Bok Choy, Mango And Coconut Milk
This smoothie feels almost a bit Asian in taste. This Chinese cabbage goes very well with mango (and pineapple), coconut milk and lime. Our kids loved this one.

Ingredients
2 bok choy
1 lime, juiced
1 cup frozen mango
1 banana
1 cup coconut milk (or more)
¾ cup of water
1 pinch of cinnamon (preferably ceylon)
Instructions
Put everything in a blender and run until smooth! Serve with ice.
Smoothie With Bok Choy, Thyme And Pear
This was also an exciting combo and since our kitchen garden is also flooded with thyme, it was perfect to have some in a smoothie. The pear creates some sweetness, but if you want it even sweeter, you can add a couple of dates.

1/2 lemon, juiced
1 handful of thyme
1 tsp hemp seeds
1 cup water (or more)
Instructions
Put everything in a blender and press start. Enjoy!
