Coconut Slices

These delicious cookies are easy to make and since they are free from gluten, sugar, dairy and nuts, they are also included in the AIP diet (autoimmune protocol)

You need some AIP-friendly baking ingredients like tigernut flour, arrowroot flour and coconut flour and then you are ready to go. My coconut slices guarantee to keep your inner cookie monster satisfied.

Coconut Slices

Ingredients

1 cup shredded coconut

1/2 cup coconut flour

1/2 cup tigernut flour

3 tbsp arrow root flour

3 tbsp coconut milk

1/2 cup water

1/2 cup coconut oil, melted

1 pinch of sea salt

1 tbsp honey

1 pinch of vanilla

Instructions

Preheat the oven to 175 °C/ 320°F. Combine all of the ingredients in a bowl. Knead everything into a dough. Flatten the dough on a baking sheet and form one long, oval big cookie. Bake in the center of the oven for 15 minutes. Cut immediately into diagonal slices. Eat and enjoy!
