Ingredients
1 cup shredded coconut
1/2 cup coconut flour
1/2 cup tigernut flour
3 tbsp arrow root flour
3 tbsp coconut milk
1/2 cup water
1/2 cup coconut oil, melted
1 pinch of sea salt
1 tbsp honey
1 pinch of vanilla
Instructions
Preheat the oven to 175 °C/ 320°F. Combine all of the ingredients in a bowl. Knead everything into a dough. Flatten the dough on a baking sheet and form one long, oval big cookie. Bake in the center of the oven for 15 minutes. Cut immediately into diagonal slices. Eat and enjoy!
