All-in-One Lemon Baked Cod with Feta, Tomato and Basil Oil
Of course we can spend a long lazy Sunday afternoon cooking, but sometimes we would rather do a simple (and tasty!) all-in-one dinner. So along that theme, here comes our favorite dish – all-in-one baked cod.
Fish, and especially fatty fish, like other foods of marine origin, is unique in its high content of the long fatty acids EPA and DHA, which both belong to the omega 3 family. These long fatty acids are especially important in improving brain function, lowering blood pressure, and for pregnant woman. Ingredients
800g potatoes
1 pot of basil
1 lemon + 2 tbps lemon juice
1 clove of garlic
4 cod fillets (can be varied with other types of white fish, but also with salmon and mackerel)
300g cherry tomatoes
200g feta cheese
100g calamata olives
To have at home
olive oil, honey, salt and pepper
Instructions
Heat the oven to 200C degrees. Cut the potatoes if they are large and put in a oven proof dish. Pour oil on the potatos and place in the oven for about 20 minutes. Meanwhile, mix the basil with 2 tbsp lemon juice, 0.5dl of oil, garlic, 1 tsp honey and taste with salt. Cut the lemon in half and add in the oven dish with cod, feta cheese, tomatos and olives. Sprinkle with salt and pepper and return to the oven for about 15 minutes. Pour the basil oil dressing over the dish and serve immediately.
