Valentine’s Day Brownies

What do you think of Valentine’s Day? Is it a day you look forward to and celebrate, or is it a day just like any other day (perhaps even a little bit silly in your opinion)?

Hand on our hearts we’ve been in the naaah camp, until we came to realize that valentine’s doesn’t have to only be about romantic relationships. It can be about celebrating love at large – love of your parents, your children, your friends. And the word “celebrate” might even be overkill – see the day as a small reminder to show love for your favorite human beings (and furry friends), the world could use more compassion and love!

Enough with the moral sermon! Move on to what we are here for, namely our fudgy raw brownies.

Valentine’s Day Brownies

Ingredients

Bottom:

1 cup walnuts, soaked

1 cup fresh dates, pitted

1/4 cup raw cacao

1 Tbsp preferred nut butter

1 pinch sea salt

1 tsp water

Frosting:

1 avocado

1 tsp vanilla extract

1 Tbsp cold-pressed coconut oil

3 Tbsp raw cacao

3 Tbsp honey

1/2 cup shredded coconut

Instructions

Combine the ingredients to the bottom in a food processor and mix into a dough that sticks together and is a little bit sticky but not like a batter. Press it out as smoothly as you can in a parchment lined baking dish and set in the freezer. Blend the avocado, vanilla, coconut oil, cacao and honey into a smooth frosting using a blender. Spread over the chilled bottom and allow to set in the fridge for about 1 hour. Remove, sprinkle with coconut and cut into small squares.
