Frozen Yoghurt Snacks With Flower Power

For those of you who couldn’t stop thinking about those frozen yogurt snacks that we teased you with on our instagram in December, the day has finally come. The recipe is as simple as it gets, it’s almost not even fair to call it a recipe. It’s more like a loose idea for the-perfect-toss-together-and-keep-around-for-when-you-crave-something-cold-and-sweet. Just Two ingredients. And a freezer. That’s what you need. Well, and a sprinkle of this and a sprinkle of that … we went with flowers but you can get groovy with whatever you choose.
Frozen Coconut Yogurt Bark
2 cups unsweetened plant-based yogurt (we used coconut yogurt)
3 tbsp honey
1 tsp lemon juice
1 tsp vanilla extract
Garnish: We used hibiscus tea and sprinkled it over with chopped pistachios but you can use fresh fruit, dried flowers, berries or spices.
Combine the yogurt, honey, lemon juice and vanilla in a bowl. Pour the yogurt mixture onto a baking sheet lined with wax paper and spread it out evenly. Top with your chosen garnish.
Pop in the freezer until hardened and cut or break into pieces, then keep in a container in the freezer.
