Dark Christmas Spiced Bread

As a nutrient hunter, we love all kinds of spices because they contain so many antioxidants. That’s why we always get extra happy when we come across recipes with a wide variety of spices. Like this bread. How often do you get anise, fennel, cloves, cinnamon and ginger all at the same time? Not very anyways.

The spices in this bread are magic to any christmas spread and have a nice warmth to them a lighter bread can’t match. Here’s how to make the spice mix for the bread.

2 tbsp fennel seeds, 2 tbsp anise seeds, 1 tbsp ground bitter orange peel(or sub finely grated orange peel), 2 tsp ground cloves, 1 tsp ground cinnamon and 1 tsp ground ginger.

All of those spices get mixed into the bread and before you know it you’ll have a wonderful Christmas scented loaf of moist bread on your counter.

Dark Christmas Spiced Bread
(servings: 1 bread loaf)

3 cups lukewarm water
2 tablespoons olive oil
1 ½  tbsp baking powder
1 ½  tbsp honey
⅓ cup of buckwheat flour
1 cup gluten-free oatmeal
3 ½ tablespoons psyllium husk
2 cups of teff flour
2 teaspoons salt
½ cup raisins
⅓ cup spice mix (see instructions above)

Mix the water with the oil and honey. Mix all dry ingredients separately and then add the liquid. Use a whisk or large spoon to combine everything into a batter. The batter will be thin but will swell into a dough within a few minutes.

Let the dough stand for 10-15 minutes before putting it into lined bread form. Bake in the lower part of the oven at 225C/425F for 70-80 minutes. Allow to cool completely on a rack before slicing.

Tip!
The bread stays fine for several days but it works to freeze it to if you want to keep it longer!
