Zucchini Soup With Onions, Cashews and Fresh Herbs

When traveling

Such a game changer to pull out a vacuum-mixed smoothie while on the go compared to one that has been laying in your bag for a few hours and turned from bright shades of green to putrid shades of wilted brown.

Prepping kid snacks

Since our kids are still too young to use the mixer themselves, it’s a great way to be able to make their snack the day before or in the morning so that it’s ready for grabs one they get home from school. 


If you tend to bring lunch from home or you hit the gym after work then bringing a smoothie along for a pre or post workout snack is a great idea, mixing with the vacuum function ensures that your smoothie stays delicious.

Whether or not you have a vacuum mixer though we can highly recommend this simple zucchini soup. We thought it was delicious cold when we made it, but it works warm too. And for those who are curious about the Nutrient Hunter Compass, this zucchini soup is a great example of how easy it is to happily tick 10 circles in one meal!

Zucchini Soup With Onions, Cashews and Fresh Herbs
(2 large portions)

1 yellow onion, finely diced
1 garlic clove, crushed
2 medium zucchini
½ cup cashew nuts (soaked)
½ cup parsley
½ cup basil
1 cube bouillon (or replace the water with ready vegetable stock)
2 cups water 
salt & pepper

Topping ideas:
beet sprouts
sunflower seeds
pea shoots
sesame seeds

Saute the onion and garlic until softened. Then pour all of the ingredients into a blender and mix everything until you reach your desired consistency.

Then boost your soup with some nutritious toppings and sprinkle over some nuts or seeds for extra crunch.
