The Magical Loaf of Bread 

This week has been full of conversations about getting kids on board the nutrient hunter train. We’ve chatted with the beloved David and Luise from Green Kitchen Stories as well as with our own team about nutrient boosting tips and tricks that are family friendly. From those conversations popped up a tip from our colleague Anna (who’s son has selective eating disorder) about a genius bread recipe that works magic on kids who only want to eat white bread.

Hope your little nutrient hunters enjoy!

Magic Bread
(1 loaf)

1 can large whites beans (e.g., butter/lima beans) 
3 eggs
3 bananas
1 ½ cup buckwheat flour
1 tsp of baking powder 
½  tsp salt
1 msk cinnamon
¼ cup olive oil 

Set the oven on 200°C/400°F. Mix the beans, bananas, eggs and oil in a blender until smooth.  Add in the rest of the dry ingredients and mix until combined. Pour into a bread form with parchment paper and bake for about 25 mins and out will pop and impressive little bread loaf. 

Tip!
The cinnamon helps the bread to have a slightly brown color but is not necessary for the recipe so you can skip it if you don’t mind a lighter color.
