Simple Asparagus Salad with a Special Touch

So simple and yet so delectable, this recipe really made the asparagus sing, though asparagus tend to reap plenty of glory all on their own during this season. Since it is in season, we bought two big bundles the other day, and the combo lemon + garlic + cumin turned out to be a definite 5 star combo. Add some beans, leafy greens, roasted almonds and an avocado and you have a summer salad!

This comes together in minutes and is a great to serve at a BBQ with friends this summer.  Nom!

Asparagus summer salad
(1 large serving platter)

2 bundles asparagus
2 cloves of garlic
½  teaspoon whole cumin seeds
1 can white beans
2 big handfuls of baby spinach
1 avocado
¼ cup roasted and chopped almonds
1 teaspoon lemon juice
salt & pepper

Cut off the woody bottom part of the asparagus and divide the rest into pieces of 2-3 cm. Sauté the asparagus on a low temp using a little water or oil for 3-4 minutes. Add garlic and cumin and sauté another 2 minutes until the garlic is soft and the asparagus is bright green but still has a still crispiness to it. Season with salt and pepper.

While the asparagus is cooking roast the almonds at a low temperature in a separate dry pan 

Combine the asparagus with the rest of the salad ingredients and squeeze some lemon over the platter. Add salt and pepper and enjoy while the asparagus are still warm.
