Dark Chocolate Oatmeal Cookies
When we opened our calendar this morning, we were totally shocked. It was completely blank!
So, we made some tea and sat down to talk about possible things to do on our day off …
How about finding the meaning of life?
Or learning to play bridge?
Or delving into the works of Karin Boye?
Or dreaming of exotic vacations?
Or eating some dark chocolate oatmeal cookies?
That’s it. No need to overcomplicate things.
Dark Chocolate Oatmeal Cookies
(10 cookies)
10 dates
almost 1 cup oat flakes
1 Tbsp chia seeds
7 Tbsp tahini
1 tsp cinnamon
a pinch of salt
melted chocolate
Mix everything but the melted chocolate in a high speed blender. Use a spoon to scoop out small amounts of the mixture, and roll into balls. Use a fork to slightly flatten the balls and create a criss-cross pattern on each cookie. Refrigerate or put in the freezer. Dip each cookie into melted chocolate. Put them back in the refrigerator. Enjoy.
