Luke Skywalker’s Palak Paneer
A little know fact about team FP: We LOVE Palak Paneer! This is a vegan friendly version that’s super easy to throw together, and our experience is that 10/10 people are delighted when you go all in Indian style for dinner. Also worth mentioning is that Luke and his groupies will also cheer for this dish, so it’s a win-win. (If you’re wondering “Who’s Luke? What groupies?” It’s time to buy our books.)
This is what you do (find the shopping list at the bottom of the post):
Marinate the tofu in olive oil, salt, chili flakes and coriander. No exact measurements here – we know that can be scary but we believe in you and challenge you to go with your gut feeling!
Chop yellow onions, garlic and fresh ginger. Gently saute with a little coconut oil in a large frying pan (preferably cast iron) to soften. Add the frozen spinach, coconut milk and the crushed tomatoes to the pan. Let it simmer on low heat for about 10 minutes. Add the tofu and the spices (cumin, cayenne, turmeric, coriander) towards the end in order to preserve the antioxidants. Serve with cooked durra (sorghum) or nude oats!

1 yellow onion
4 garlic cloves
3 cm finely chopped ginger
1 pack of frozen spinach
1 can of crushed tomatoes
1 can of coconut milk
1 teaspoon of cumin
1 teaspoon turmeric
2 teaspoon ground coriander
½ teaspoon cardamom
⅛ teaspoon cayenne pepper
coconut oil
2 cups durra
