It’s Cinnamon Bun Day – Again!
Once again, it’s Cinnamon Bun Day in Sweden. Can’t believe it’s already been a year. Time flies! We could of course have come up with a brand new recipe for cinnamon rolls but, well, we didn’t. Here are Luke Skywalker’s Cinnamon Rolls. Again. They’re just too good to be true.
And no, they’re not going in the oven.
Luke Skywalker’s Cinnamon Rolls
”Bun dough”:
almost 1 cup cashew nuts
0.5 cup oat flakes
0.5 cup grated coconut
1 pinch of salt
8 fresh dates (pitted)
3-4 teaspoons of water
Filling:
almost 1 cup almonds (preferably soaked)
1 tablespoon ground cinnamon
8 fresh dates (pitted)
1 tablespoon of water
Roast the cashew nuts and the oat flakes in the oven at no more than 212° Fahrenheit (or 100° Celsius) for about 10 minutes. Mix the ingredients for the bun dough using a high speed blender, and roll out into a rectangle between two baking papers. Once again, use your high speed blender and mix the ingredients for the filling. Spread evenly over the dough. Roll the whole thing (like a Swiss roll) and let cool in the fridge, then cut the roll into slices. Garnish each slice with grated coconut.
