Vegan Paella With Cauliflower Rice
Well, hello there cauliflower head. What are you up to?
Nope, we will not serve you with carrot sticks and store-bought dipping sauce this time.
Sorry to spill the beans but we cherry-picked you for something completely different.
First, we will turn you into cauliflower rice.
And then add saffron, white wine, vegetable broth and …
… lots of yummy vegetables. And, the fruits of our labour:
Yup, you guessed it. A tasty cauliflower rice paella!
Vegan Paella With Cauliflower Rice
(serves the whole family)
1 head cauliflower
1 yellow onion
3 garlic cloves
2 bell peppers
10 small tomatoes
1 can chickpeas
1 cup frozen green peas
0.5 grams saffron
1 cup white wine
1/2 cup vegetable broth
1/2 lemon
fresh parsley
salt and freshly ground black pepper
Heat a large skillet over low heat and add chopped onions and garlic. Drain and rinse the chickpeas, chop the bell peppers and dice the tomatoes. Add chickpeas, bell peppers and tomatoes to the skillet, then add cauliflower rice, saffron, wine and vegetable broth. Let simmer over low heat. Add the green peas shortly before serving. Drizzle with lemon juice and sprinkle with parsley, salt and freshly ground black pepper.
