Beginning of the School Year: Packed Lunches and Snacks

Middle of August and ambitions are flying high. This semester will be different, better: the homework will be done on time, we will never forget gym clothes, and all packed lunches and snacks will be filled with antioxidants and fiber.

Well, we already know that won’t work. We’re not perfect, not even close. And it’s not the end of the world. Anyhow, let’s all agree to do our best. Here are some easy lunchbox snacks.

1 Smoothie
Smoothies are the perfect food on-the-go. Add to a thermos or vacuum flask and keep your kid’s favorite smoothie cool on the move. But don’t forget to add frozen berries! This beach smoothie is great (for an even more kid friendly recipe: less greens, more fruit and berries).

2 Soup
Yummy! There are as many soups as there are dust bunnies under our beds. Which one is your favorite? Add to a thermos and you’re good to go.

3 Pancakes
Children of all ages love pancakes, and most kids will be thrilled to have them for lunch. This recipe for chickpea pancakes is a family favorite. And you have to try these ridiculously easy and delicious banana pancakes (with or without elderflower).

4 Cucumber sushi
Seriously, look at this recipe. Brilliant idea, right? Swap the ham for hummus or whatever else takes your (and your kids’) fancy.

5 Homemade bread with lots of seeds
Have a favorite recipe for quick bread? If you don’t, you can use this one. It’s a great basic recipe that can be adapted with whatever seeds, nuts and flavors you have on hand.
