Spaghetti and Meat Sauce (Without Spaghetti and Meat Sauce)
Congratulations, you have just been prescribed spaghetti and meat sauce. Without spaghetti, naturally. And wouldn’t you know it, with no meat sauce, either. We’re well aware that lying causes troubles, but over the years – hand on heart – we have told a couple of green lies to our children.
For both health and environmental reasons, a lot of people should decrease their intake of meat. From the short-term view of intestinal flora, you don’t have to become a vegan. But if most of us don’t decrease our intake of meat, our world will not survive, and our intestinal flora will go down along with it. Therefore, it’s time to learn how to make meat sauce with beluga lentils. Aside from the fact that your entire family will love this dish, it’s also anti-inflammatory (surprise, surprise) and full of green wonders.
Spaghetti and Meat Sauce (Without Spaghetti and Meat Sauce)
(serves 4-6)
3/5 cup (150 ml) Beluga lentils
1 Tbsp vegetarian stock powder
1 garlic clove, peeled and crushed
1 yellow onion, peeled and sliced
1 lb (500 g) crushed tomatoes
2 handfuls baby spinach
1 carrot, peeled and grated
Salt and freshly ground black pepper
1 cup oat cream or creamy oat fraîche (optional)
1 tsp honey (optional)
2 zucchini
Fresh oregano and basil
Bring the lentils, stock powder, and onion to a boil in twice the amount of water. Cook for 25 minutes or until the beluga lentils are al dente (firm and just tender). Add the crushed tomatoes when the water has been absorbed. Mix everything with the spinach and grated carrot (use an immersion blender). Add salt, freshly ground pepper, oregano and basil to taste. If you feel like it, add 1 tsp honey 1 cup oat cream or creamy oat fraîche.
Grate the zucchini with a mandolin, cheese slicer, or spiralizer. Contrary to regular pasta, which is quickly absorbed by the small intestine and converted to sugar in the body, this vegetable pasta travels effortlessly all the way down to the good bacteria in the colon. Top with the sauce and serve with sprinkles of anti-inflammatory oregano.
Do you have whiny kids?
Feel free to switch the vegetable pasta to bean noodles, for example. Use the same spices you add to your usual meat sauce, or mix in some of your meat sauce with our vegetarian version, gradually decreasing the amount meat and increasing the amount of lentils. All roads lead to Rome, right?
