Overnight Oats with Chia Seeds, Coconut and Passion Fruit
Our chia-seed-hating friend Runken finally found a chia recipe that appeals to her. This is such great news, and it needs to be celebrated here on the blog.
Add 0.5 cup oat flakes, a pinch of pure vanilla powder, 2 tbsp chia seeds, 0.5 cup plant-based milk of your choice, and the juice from 1 orange to a small bowl. Mix and put in the fridge.
Leave it there overnight. Brush your teeth and go to bed.
Good morning! Remove the oatmeal from the fridge, and top with some coconut flakes and passion fruit.
And by the way, this is our friend Runken 30 years ago (and Mia to the left). These ballerinas never made it to the top. But they made overnight oats.
