List of Substitutions: the Summer Food Traps
Summer days with clear blue skies, and the kids are begging for ice cream, soda, cinnamon rolls and juice. Once in a while it’s probably ok to give in, but maybe not every day?
Ice cream
If you have a freezer, making your own ice cream is as easy as falling off a log. Mix frozen berries or frozen banana with plant-based milk and some kind of spice. Here’s a recipe for hazelnut ice cream, and here’s one for the perfect chocolate and orange ice cream. Cinnamon rolls
This may not be as quick and easy as ice cream, but remember, the journey towards your goal matters more than the destination. Involve your kids or feel free to lock yourself in the kitchen if you need some alone time. Here we go: Luke Skywalker’s cinnamon rolls.
Soda
Want to make your own juice blend? Go for it! Try mixing sparkling water with juice and serve over ice. Delicious!
Sugary fruit drinks
Make your own fruit slushie instead. They’re easy to whip up in a blender, made with melon, berries (or whatever fruits you like) and lots of ice. Here’s an incredibly tasty recipe for watermelon slush.
Swedish fika
Fika is an everyday Swedish tradition. It’s basically a coffee break, often accompanied with pastries, cookies or pie. For a healthier fika, don’t forget about berries! Everybody loves raspberries, strawberries, blueberries, red currants and blackberries. Also, they contain loads of fiber and antioxidants to keep the good bacteria in your gut happy.
