Delicious and Healthy Watermelon Cake
Not only do we share a passion for anti-inflammatory eating, we also see the same therapist. Most people just laugh when they hear it, but believe it or not, it’s practical. First of all, we can switch appointments. And, thanks to this, we have the same outlook on many things in life. We speak the same language, and that makes it so much easier to work together.
Like so many others, we’re looking for inner peace. How nice it would be to find that someday! Of course, there are many ways to get there. According to our therapist, the key is that you don’t want to set your expectations too high.
Just think about the cake in the picture above. If you say “time for CAKE” and bring out a watermelon with whipped cream, it doesn’t matter how good it tastes – everyone will be disappointed it’s not an actual cake. But! If you say “time for some WATERMELON” and then serve this fabulous cake, you’ll bring the house down.
Watermelon Cake
1 small watermelon
1 can coconut cream
10 Tbsp sliced almonds
1 kiwi
fresh berries
Cut an inch or so off the top and bottom of the melon. Peel it with a sharp knife until you have a round watermelon cake. Cover with whipped cream. Place sliced almonds on the sides of the cake, then kiwi and fresh berries on top. Shout “time for watermelon!”.
