Quick Tip: Freeze Citrus Zest
If you’ve read our book, been to any of our lectures, or if you visit our blog on a regular basis, you probably know that we’re crazy about fruits and vegetables. And when we eat vegetables, we eat the entire thing. And by that we mean tops, cores and skin – the parts that contain a majority of the nutrients.
Time for a great tip! Any time you’re about to use a lemon, take a few seconds to zest it first and pop that in the freezer. Peels from an organic, washed lemon contain a spectrum of vitamins, minerals and fiber, and some say that the zest contains ten times more vitamins than the juice. So far, so good. The problem is, lemon zest can sometimes add a slightly bitter taste to a smoothie or a soup. Frozen lemon peels on the other hand, taste completely different. Try freezing the whole lemon! Remove from the freezer and sprinkle some grated zest over your dinner before you eat.
