No-Fruit Green Smoothie
Once again, we would like to strike a blow for the green smoothie. But this time, for the one without fruit. And yes, recipes for green smoothies literally grow on trees – there are as many recipes for green smoothies as there are versions of salads and soups. However, all of them will include some kind of leafy greens.
Since summer is around the corner, today’s recipe contains spinach and parsley. If you read this in the end of October, feel free to substitute the parsley for Swiss chard (and the crop top for a turtleneck shirt). In the winter, you make this with kale and cavolo nero (and sip it by the fireplace).

Green Smoothie
(serves 2)
1 cucumber
2 large handfuls fresh parsley
1/2 lemon
1 avocado
2 large handfuls fresh spinach
2 cups water
ice
Add all ingredients to your high speed blender. Mix until smooth. Cheers!

Since we hate wasting food, we usually add 1/4 of the avocado pit to our smoothies. And while you’re on it, add the lemon seeds as well. Lemon peels on the other hand, can sometimes add a bitter taste. But remember, each to their own. Play around with it!
