Baby Easter Chicks with Almond Paste

It’s time for Easter treats. This year, we thought it would be a good idea to make some marzipan chicks together. As the name implies, the paste is made from lots of almonds, a little bit of honey and a pinch or two of turmeric. It’s quick to make, easy to work with, and makes the best decorations whatever the occasion.

Blanch the almonds if you want bright yellow baby chicks, or don’t, if you want them to contain lots of nutrients and fiber. It’s your call.

Baby Easter Chicks
(a small family and some cousins)

1 cup almonds (or 125 grams)
2 Tbsp honey
a pinch or two of turmeric
cacao nibs
goji berries

Add the almonds to a blender and grind them into flour (or buy almond flour in the store). Then add honey, turmeric and mix some more. If the paste is too dry, add a few drops of water. Cut the almond paste into pieces and make tiny yellow chicks. Decorate them with cacao nibs and goji berries. Take a moment to be proud of what you’ve accomplished. You’re a natural born artist.
