Whatever-You-Have-at-Home-Granola
In our book, you’ll find the recipe for Luke Skywalker’s granola – a wonderfully delicious granola with buckwheat, seeds, nuts and coconut. Yummy. But if you don’t want to grab the book from the shelf, here’s another one. Feel free to name it yourself. Why not R2D2’s granola? Obi-Wan Kenobi’s muesli? Princess Leia’s super cereal?
Anyhow, this recipe calls for: whatever you have at home.
Whatever-You-Have-at-Home-Granola
(almost 5 cups)
3 cups seeds/nuts/flakes
1 1/2 tbsp cinnamon
1/2 tbsp cardamom
2 tsp pure vanilla powder
a pinch or two of salt
almost 1 cup water
3 tbsp cold-pressed coconut oil
1 cup roasted coconut flakes
4 tbsp raw cacao nibs
1 cup dried berries or fruits (raisins, apricots, blueberries, goji berries)
Preheat the oven to 212 degrees Fahrenheit (or 100 degrees Celsius). Put all dry ingredients in a bowl. Bring water and coconut oil to a boil, pour over the dry mix and stir. Spread the mixture on a baking sheet lined with parchment paper, and bake in the oven for about 75 to 90 minutes, until crisp and golden. Let it cool. Add coconut, raw cacao nibs and dried berries or fruits. Enjoy!
