A Quick and Delicious and Incredibly Easy Everyday Recipe for Oven-Baked Cod
You look at the clock. You rush to daycare. You rush home.
You give the child a hat and a guitar. The child doesn’t want the hat and the guitar. You hand the child your smartphone.
You long for your bed.
You drag yourself to the kitchen. You realize that you forgot to go grocery shopping. You grate some ginger, find some chili flakes, and squeeze the juice from one lime.
You’ve read somewhere that garlic is good for you. You chop some garlic.
You add some tamari, a few drops of sesame oil and coconut milk to the spices. You mix.
You cook quinoa. You thaw four pieces of cod and preheat the oven to 140 degrees Fahrenheit (or 60 degrees Celsius). You pour the sauce over the fish, and put the fish in the oven. You wait.
You put the food on the table and encourage the child to try it. The child likes the food. The child doesn’t throw the food on the floor. The child eats the whole plate.
